A friend asked me to make some very special birthday cakes, which I was happy to do but I was a little apprehensive as I’d only ever really baked for myself and family before.
We agreed that the cakes would be triple-layer chocolate sponges, filled with both milk and white chocolate ganache and whipped cream and covered with milk chocolate ganache and decorations.
I baked two or three practice cakes – getting marginally less messy each time – and used a ridiculous amount of chocolate, eggs and butter etc. in the process. Some turned out better than others and it took me quite a while to get the decorating right, but they tasted pretty much ok so I was very popular with my family and friends for a few days!
